I’d get a prime rib from Saltgrass Steakhouse if I was in Texas.

Sounds like you have good taste.
We had Saltgrass here on the boardwalk in Bossier, Louisiana but never tried it. Although, I heard excellent things about the restaurant before COVID-19 made them shut their doors here.
I prefer the New York Strip and especially the Porerhouse. Salt grass is my favorite.
