A VERSATILE, clever system is from DMT, who originated diamond hones. Their adjustable “Aligner” knife-clamp can be bought separately, or you can buy kits that use it. For steeling, two products from Sheffield England are the CHANTRY and “Mini-Chantry” - they use crossed, spring-mounted butcher steels that rotate as you go along.
