:man_facepalming: Dam it!!! I just stuck my fork through my laptop and sliced the screen with my knife trying to cut that Prime Rib!!! $#!T I must be getting tired, feeling exhausted, :face_with_spiral_eyes: :yawning_face: better head for bed :sleeping_face: I’m Out!!!

Haven’t done hens in forever!

Sis has been doing prime rib for thanksgiving lately, I did ribs two years ago, just celebrated with my boys last year, did a whole turkey, breast….. just three of us, no sense in cooking a whole bird.

No actual plans for this year…..

I like mine smoked for about an hour then finished in the oven. A light smoke gives it so much more flavor. Put coarse or cracked black pepper and coarse Kosher or sea salt. Chop garlic then rub it over the rib. I use Mesquite wood. Slow cooked to the desired temperature you want.

If you want to make a really good turkey gravy, make a good turkey stock. Once you have a good turkey stock add ground turkey to it and reduce it down from 1 gallon to 1/3 of a gallon. This will be a full turkey gravy flavor. Chefs call it a demi-glace, but it will beat any gravy you have ever had.

When I go to reduce it I am going to add ground turkey to it while iut reduces then when it is done, I will strain it.

What do you do with the ground turkey?

You put it in the stock, and it builds on the turkey flavor while you reduce it. After it reduces it takes all the flavor out of the meat and leaves it in the stock. That is why you strain it out. The ground turkey itself will not have much of any flavor.
