Not really. I do like to try other people’s versions of chilli though.
I have yet to perfect any chili recipe. I have won second place at a Harley Davidson Chili cook-off. It is that chef thing about it for me, it can be better, always. The details of the chili and the balance of flavors hitting all the points of color, aroma, flavor, texture, and heat. I want it to have a good beef flavor, and a balanced chili mix and acidity,
I have yet to find the perfect chilli recipe. It does not exist I believe. Fortunately that quest will continue. ![]()
It’s always a hard balance of are the peppers cooked? Is the bacon gonna be crispy?
I was a bit heavy on the smoke and hot on the cook,… but they’re edible at least!

Chicken!
Nothing too fancy, it just needed to be cooked, so some will go on pizza my son has taken to cooking,… some will probably go in fried rice…. Maybe I’ll make some chicken noodle soup ![]()

Norlands is on my bucket list, as a chef, I have been cooking Cajun/ Creole food with excellent feedback from people. I have just followed the books from Paul Prudholm, but I have not had the chance to get down there and try some from the area. So, Coops Place is on the list now! Thanks!
