This is the part most people miss when they pick up a package of meat, it is becoming a lost art but when you sit down to that first meal with your family it will be hugely satisfying. Guaranteed.
Now you have to shoot that deer first and that is a another world in itself.
A good vid on packaging, I prefer to vacuum seal for long term storage, If your not going to eat it in a month then vacuum seal it.

Horse meat is eaten almost everywhere. Nothing special in Italian cuisine.
I want to hunt this year for the first time and this video is very informative. Thank you for the post. This was my first time watching a field dress. I was surprised it didn’t bother at all.
One tip. get the long plastic gloves that come up to your armpits and the wear a pair of regular latex or nitril gloves over them, you will stay cleaner. I have cleaned more deer then I can remember.
I’ve always said that dinner tastes better when you kill it yourself. Processing it is part if that.
When I built I put an I-beam, trolly, chain fall, hot/cold water, and counter space in the garage for just that purpose.
I’m trying to find someone to go with me for my first time. So far no luck. But it’s ok I’ll do it myself if I have to. At at least that way no one will see me throw up…
Some things to remember off of the top of my head.
If you split the sternum (it’s pretty soft and a couple of light chops with a sharp kbar is all it takes for a deer) it will make it alot easier to clean out the chest cavity
Be extra careful not to cut open the stomach, guts, or bowels when you unzip it. It get’s messy and contaminates meat. Put the deer on it’s back and use your fingers on your non-cutting hand to go under the skin and thin muscle layer and separate it up and away from the inards.
Use gravity to your advantage. Once you have detached both ends (esophagus and anus) and cut the diaphragm loose all the way around you can pretty much just dump it all out on the down hill side.
I for one like venison meat, it tastes a little gamy. I assisted my friend who once took me hunting up in Oneonta NY field dress a doe. It was my first time about Oct. 1989. He mentioned if you cut to far into it’s rectum that green stuff comes out and it will spoil the rest of the meat. It went well for the first time. That was the last and only time I’ve done it. Would do it again if I had to. I still eat venison meat.
Is there anyone in Indiana, IL, or OH that would take someone dear hunting for the first time? I’ve been studying all about it. But it would be nice to have a experienced hunter with me for the first time. I have a.357 Magnum revolver (my son’s revolver) and a 12 gauge shotgun. And looking to buy a rifle. So anyone want to have fun watching a newbie throw up his first field dress?
