Yes, I do a lot of veggies on the grill, too. I love the smoke and a bit of char. Brussel Sprouts lose the bitterness, even if not fully cooked, which, as they vary so much in size, there will always be at least a few that still have some firmness. I believe it is the smoke that helps remove the bitterness from them, and they always taste so much better grilled. I do beets, potatoes, carrots, cabbage, fennel, broccoli, mushrooms, etc., etc.
Just did pork chops and corn on the cob last night. Grilling corn is the best way to do it, I think. I agree, it does a great job roasting the vegetables. It’s like roasting in the oven, but with some smoke and more direct heat so they don’t get soggy and steam like the oven can sometimes do.
We get nor’easters here from time to time. We’ve had 3+ feet of snow on the ground. I always make it a point to shovel out the grill and cook something outside to celebrate being snowed in for a week or so.
The neighbors look at me funny, but they do that anyway.
I tried brussel sprouts once. They didn’t turn out well on the grill. This is inspiration to try them again. My dad does them all the time but I think he uses frozen ones. I was using fresh and they stayed hard and bitter.
